veggie burgers
if you want meatless burgers, but cannot afford Beyond/Impossible burgers, you will want to try these veggie burgers.
ingredients
- 2 tablespoons olive oil
- 1 small yellow onion peeled and diced
- 2 cloves garlic minced and peeled
- ¼ teaspoon ground cumin
- ½ teaspoon coarse salt
- ¼ fresh ground black pepper
- 1 14 ounce can of black beans, drained & rinsed
- ½ cup cooked brown rice
- 1 tablespoon fine chopped cilantro
- 2 tablespoons flour
- 3 tablespoons safflower oil

- Heat the olive oil in a medium saute pan over medium-low heat.
- Saute the onion, garlic, and cumin together until softened and fragant, about 7 min.
- Add the salt,pepper,beans and rice and cook, stirring, for 7 minutes
- Add the cilantro and mash the mixer with a potato masher just to combine and get some coheshion- you want the burgers to have texture!!!
- Let the mixture cool until it is easy to handle.
- Form the mixture into 4 patties.
- Put the burgers in the fridge for a few hours.
- Dust both sides with flour
- Heat the safflower oil in a large skillet over medium-high heat and brown the burgers on both sides, about a minute on both sides.
- Serve on the buns with your favorite toppings and enjoy!
